  1. The easiest way is to get a chocolate mould in the shape of an Eiffel Tower. You can get them at: www.amazon.com/eiffeltowermould or www.anoccasionalchocolate.com
  2. I don't know what you can use, but I think if you google what you want, you will find it. Good luck.
  3. This is no problem if you simply raise four triangles of ginger-bread (or sweet pastry of any kind) and then draw your metal struts of the tower on the sides in chocolate. Much more strength than trying for an open structure.
  4. Chocolate. Draw a pattern and then melt the choc. Place a piece of waxed paper over the patteren and trace it with the choc, use a pastry bag or a zipper seal one with a corner cut out, do this 4 times then seal the sides when they are set with more choc, or....the same icing you use on gingerbread houses, having a duh moment. Make the lines nice and thick so they will be sturdy. And melt your choc in small batches so that it doesn't all half way thru the drawing/tracing phase.
  5. icing? fondant? cookies? ice cream? hope i helped! ~k~
