Whats a strong garden vegetable plant?

Since I have a balcony I never use, I'm gonna get me a big box with some soil and grow me something I can eat. I'm gonna grow vegetables cause I have nothing better to do. BUT, the weather up here is a little unpredictable, and I tend to forget things. SO, whats a good vegetable plant I could grow and eat that can stand up to long periods of cold or neglect? Whats hardy?

Tomatos would be really easy! i dont know where you live but i am in the south! since you dont have much room you could take a couple 5 gallon buckets and fill them with soil place you a stick or rod in the center of it and the plant yout tomatos next to it.... water about every other day, and since they are in the buckets you could always bring them inside if it get to cold... make sure you fertilize maybe once a week or so... you also may have to tie your vine to the stake once it starts to grow!!!
  3. Any type of squash: zucchini, yellow crook neck squash, etc. Cucumbers are also fool-proof. Good luck!
  4. Ever thought of herbs? As long as your temp doesn't go into freezing most herbs will be fine but you should water when it is dry and that goes for anything you grow in a pot. Pots dry out faster. Watch your porch and how much and when the sun shines on it. That will also give you an idea of what you can plant because some plants need more direct sun light than others.
  5. soil is very heavy - please make sure you chose the box size according to the weight your balcony is able to carry. I believe Tomatoes do not react at all well if you forget to water them regularly. Squash/Zucchini, etc. need a LOT of water and "food"; I have made very disappointing experoences with trying to grow them in (really big) pots. Portulaca Oleracea can stand drought, heat and neglect, and can be turned into a salad component. Cyperus Esculentus is pretty tough - but it's a plant that makes a LOT of work harvesting Stachys Affinis is, like Portulaca, more or less a weed, and should grow regardless of neglect; same goes for Helianthus tuberosus or Helianthus strumosus.
